Eyibil has just a year left on his current contract and will be able to enter direct talks with other clubs in January unless he signs an extension.
Everton have become the latest in a growing list of European clubs tracking the rise of Eyibil.
Aston Villa and Newcastle United have also been keeping tabs on the No 10 after excelling at youth level for Mainz.
Turkish giants Besiktas, Fenerbahce and Galatasaray have also all expressed an interest in the youngster who would be able to play under domestic status in Turkey due to his heritage.
The 18-year-old was promoted to the first-team this summer and has featured in pre-season games.
He is expected to feature for the Bundesliga outfit next term over the 2019-20 campaign.
Eyibil’s playing style has been likened to Mesut Ozil and like the Arsenal star he is also an ethnic Turk born in Germany.

At U19 level he netted 17 goals and provided six assists in 23 games in the south division of the Under 19 Bundesliga last season.
The Mainz starlet has played for the Germany national team from U15 level and was promoted to the U18s in December 2018 but he is also eligible to represent Turkey.
The Turkish Football Federation have offered Eyibil a place in the senior national team setup.
